Can I send out notifications at every stage of the delivery process?

You can toggle on or off different triggers at which notifications are sent out.

Step 1: Click on 'Settings' from the side menu. 

Step 2: Click on 'Recipient Notifications'.

Step 3: You can scroll down and toggle on or off each event at which you want notifications to be sent out to the recipient.
